Vegan Chocolate Chip Cookies

Serves 6

1 cup — white sugar
1 1/2 cup — brown sugar
9 tbsp — olive oil
3/4 cup — shortening
1 cup — water
3 cups — all purpose flour
1 tsp — baking powder
1 1/2 tsp — baking soda
1 pinch — salt
1 cup — dark chocolate chips

  • In a large bowl, beat white sugar, brown sugar, shortening & olive oil (preferably using a Kitchen Aid or hand mixer)
  • Once fully combined (should like white, creamy & fluffy) pour in the water while mixing on low speed
  • Mix on high for 5-minutes
  • In a separate bowl, sift the all purpose flour, baking powder, baking soda and salt
  • Gently combine all ingredients into one bowl
  • Once fully combined, fold in the plant-based dark chocolate chips
  • With a large ice cream scoop or spoon, divide the dough into 6 equal portions, and roll into symmetrical spheres
  • Line your baking sheet with parchment paper and place your dough spheres adequately spaced out
  • Want to elevate them even more? Add a sprinkle of Maldon Sea Salt for a little extra kick
  • Preheat oven to 350 degrees and bake for 10-12 minutes
  • Make sure to let them cool
